What’s in season from January – March?
SALAD FIXIN’S for sure! Arugula, lettuces, microgreens, mushrooms, onions and spinach are in season in the winter months!
Favorite Lo-Cal Salad Dressing:
1/2 cups reduced calorie mayonnaise
1/2 cup 2% milk
1/4 cup water
4 tsp. white wine vinegar
1 tsp. minced garlic
Fresh basil (in season now) or 1/2 tsp. dried basil
Fresh oregano (in season now) or 1/2 tsp. dried oregano
1/2 tsp. salt and 1/4 tsp. pepper
Thoroughly mix the ingredients in a small bowl and let sit overnight in refrigerator.
ROOT VEGETABLES! Sweet potatoes, turnips and carrots are super-healthy!
Lovely Turnips and Greens
2 1⁄2pound(s) uncooked turnip(s) (3 large) with greens attached
2 tsp. olive oil
4 garlic cloves, thinly sliced
1 tbsp white balsamic vinegar
1/2 tsp. salt
1 tbsp honey
1 tsp. grated orange zest
Spray cooking oil
Heat oven to 400 degrees. Spray baking sheet with cooking oil. Peel and cube turnips (3/4” cubes). Place in bowl and drizzle one tsp. olive oil over the cubes, toss to coat. Turn out on baking sheet, one layer. Reserve bowl.Bake for 25 – 30 minutes, turning once. Remove and discard stems from turnip greens. Chop greems. Heat remaining tsp. olive oil in non-stick skillet over medium heat. Add garlic and cook until golden (2 min). Add half the greens and cook until wilted, add the remaining greens and cook until wilted. Stir in the vinegar and 1/4 tsp salt. Turn greens into reserved bowl. Add honey, orange zest and remaining salt and toss well. Spoon greens onto serving platter and top with baked turnips. You’ll love it!
